Some of the best recipes start with a memory and a little imagination.
Growing up, orange cream ice cream bars were always a favorite summer treat. That creamy, fruity combination is hard to forget.
This time, instead of orange, I decided to create my own version using strawberries.
The result was a homemade Strawberry Cream Popsicle that's sweet, creamy, refreshing, and perfect for a hot summer day.
A Mariposas Twist on a Classic
Rather than recreating the traditional orange cream flavor, I wanted to use one of our family's favorite fruitsโstrawberries.
The sweet strawberry flavor paired with creamy swirls creates a frozen treat that feels both nostalgic and unique.
It's familiar enough to remind you of childhood ice cream truck favorites, while still being something completely its own.
Homemade Strawberry Cream Popsicle Recipe
Ingredients
Strawberry Layer
2 cups fresh strawberries, washed and hulled
2 tablespoons honey or sugar (optional)
1 tablespoon lemon juice
Cream Layer
1 cup vanilla yogurt
ยฝ cup heavy cream or half-and-half
1 teaspoon vanilla extract
Instructions
Add strawberries, honey, and lemon juice to a blender.
Blend until smooth.
In a separate bowl, mix together the yogurt, cream, and vanilla.
Fill each popsicle mold halfway with the strawberry mixture.
Add a few spoonfuls of the cream mixture.
Repeat layers until molds are full.
Use a knife or skewer to gently swirl the layers together.
Insert popsicle sticks.
Freeze for at least 6 hours or overnight.
Run warm water over the outside of the mold for a few seconds before removing.
Tips
Use frozen strawberries if fresh aren't available.
Add more cream for a richer flavor.
Try Greek yogurt for extra protein.
Add strawberry chunks for extra texture.
Substitute blueberries, peaches, or mango for different variations.
