Mini Cookie Bites: Cookie Cereal

There’s something about making food mini that automatically makes it more fun. 😂 These little cookies started as a simple homemade snack, but once I saw the tiny ones all together, I immediately thought: cookie cereal.
That’s one of the things I love most about making food from scratch. One recipe can turn into several different ideas depending on the size, flavor, or add-ins you use.
These mini cookies are perfect for lunchboxes, after-school snacks, road trips, little treat bags, or a bowl of homemade cookie cereal with cold milk.
And because they’re tiny, you can make a whole batch and have an easy grab-and-go snack ready for the week.
Homemade Mini Cookies
Ingredients
½ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup mini chocolate chips
Directions
Preheat your oven to 350°F.
Line a baking sheet with parchment paper.
Beat the softened butter, brown sugar, and granulated sugar until creamy.
Mix in the egg and vanilla.
In a separate bowl, combine the flour, baking soda, and salt.
Gradually mix the dry ingredients into the butter mixture.
Fold in the mini chocolate chips.
For regular mini snack cookies, roll tiny portions of dough about the size of a marble.
For cookie cereal, make them even smaller — about pea-sized.
Place them on your prepared baking sheet, leaving a little space between each cookie.
Bake for approximately 5–8 minutes, depending on their size.
Remove them when the edges are lightly golden.
Let them cool on the baking sheet for a few minutes before transferring them to a cooling rack.
Important: The cookie-cereal size bakes FAST, so start checking those around the 5-minute mark.
🍪 Make Them Two Ways
Mini Grab-and-Go Cookies
Make them slightly larger and pack them into:
lunchboxes
snack containers
treat bags
road-trip snacks
after-school snack cups
party favor bags
They’re small enough for little hands but still feel like an actual cookie.
🥛 Homemade Cookie Cereal
Make the dough pieces extra tiny and bake until they're a little more crisp.
Once completely cooled, add them to a bowl and pour cold milk over them.
You want the cookies small enough to eat with a spoon but sturdy enough that they don't instantly fall apart in the milk.
And yes...it's basically permission to eat cookies for breakfast. 😂
Change Up the Flavors
This is another recipe you can make your own.
Try:
Double Chocolate
Add cocoa powder and chocolate chips.
Birthday Cake
Swap some of the chocolate chips for sprinkles.
Cookies & Cream
Add crushed chocolate sandwich cookies.
Peanut Butter Chocolate Chip
Add peanut butter to the dough and use mini chocolate chips.
White Chocolate
Use mini white chocolate chips.
Cinnamon Sugar
Skip the chocolate chips and lightly coat the dough in cinnamon sugar.
You could even divide one batch of dough and make two or three flavors at once.
Storage
Once the cookies are completely cool, store them in an airtight container.
Counter: about 4–5 days
Refrigerator: about 1 week
Freezer: up to 2–3 months
For lunchboxes, portion them into little containers or reusable snack bags ahead of time so they're ready to grab.
For cookie cereal, I prefer keeping them at room temperature in an airtight container so they stay crisp.
From My Kitchen
One of my favorite parts about Mariposas has been realizing that homemade doesn't always have to mean complicated.
Sometimes it's taking something as simple as a batch of cookies and finding another way to use it.
Big cookies.
Mini cookies.
Cookie cereal.
Lunchbox snacks.
Party treats.
Same kitchen, same basic idea — just a little creativity.
And that's pretty much how things happen around here. 🦋
