🍔 Homemade Sesame Seed Hamburger Buns
Soft, fluffy, bakery-style buns perfect for burgers, BBQ sandwiches, or pulled pork.
Ingredients
2 cups warm whey (or warm milk)
2 tbsp sugar
2¼ tsp (1 packet) active dry yeast
¼ cup unsalted butter, melted
1 egg
2 tsp salt
5½–6½ cups bread flour (or all-purpose flour)
Egg Wash
1 egg
1 tbsp water
Topping
2–3 tbsp sesame seeds
Instructions
1. Activate the Yeast
Mix the warm whey, sugar, and yeast together. Let sit for 5–10 minutes until foamy.
2. Make the Dough
Add the melted butter, egg, and salt.
Mix in the flour one cup at a time until a soft dough forms.
Knead for 8–10 minutes until smooth and elastic.
3. First Rise
Place dough in a lightly greased bowl.
Cover and let rise for about 1 hour, or until doubled in size.
4. Shape the Buns
Divide dough into 8 equal pieces.
Roll each into a smooth ball.
Place on a parchment-lined baking sheet and gently flatten each one into a burger bun shape.
Leave about 2 inches between buns.
5. Second Rise
Cover and let rise for another 30–45 minutes until puffy.
6. Add the Sesame Seeds
Whisk together:
1 egg
1 tablespoon water
Brush each bun with the egg wash.
Immediately sprinkle generously with sesame seeds so they stick before baking.
7. Bake
Bake at 375°F (190°C) for 15–18 minutes, or until beautifully golden brown.
8. Finish
Brush the tops lightly with melted butter for an extra soft, shiny bakery finish.
Cool on a wire rack.

Fresh homemade buns take burgers to a whole new level. I like making a double batch and freezing the extras. Just thaw what you need, warm them for a few minutes, and they taste almost like they just came out of the oven.
