Homemade Cottage Cheese YES WHEY
Homemade Cottage Cheese (And Don't Throw Away the Whey!)
There is something so satisfying about turning a simple gallon of milk into fresh homemade cottage cheese.
It might sound complicated, but once you make it yourself, you'll realize just how easy it is—and how much better it tastes.
One of my favorite parts of cooking from scratch is discovering that almost nothing has to go to waste.
When I make cottage cheese, I don't just get delicious cheese.
I also get something just as valuable...
Fresh whey.
Instead of pouring it down the drain, I save every drop.
Homemade Cottage Cheese
Creamy, fresh, and made with just a few simple ingredients.
Prep Time: 10 minutes
Cook Time: 20–25 minutes
Yield: About 4 cups
Ingredients
1 gallon whole milk (avoid ultra-pasteurized if possible)
½ cup white vinegar or ⅓ cup lemon juice
1 teaspoon salt (or to taste)
¼–½ cup heavy cream (optional, for a creamier cottage cheese)
Equipment
Large heavy-bottom pot
Thermometer (recommended)
Cheesecloth or a clean flour sack towel
Colander
Large bowl
Instructions
1. Heat the Milk
Pour the milk into a large pot and slowly heat over medium heat.
Stir occasionally to prevent scorching.
Heat until the milk reaches 190°F (88°C), just before it boils.
2. Separate the Curds
Remove the pot from the heat.
Slowly stir in the vinegar (or lemon juice).
Stir gently for about 30 seconds, then stop.
Let the milk sit undisturbed for 10–15 minutes while the curds separate from the yellow-green whey.
3. Strain
Line a colander with cheesecloth and place it over a large bowl.
Carefully pour the curds and whey into the colander.
Don't throw away the whey! Save it for homemade bread, rolls, pizza dough, pancakes, or soups.
4. Rinse the Curds
Rinse the curds gently under cool water.
This removes the acidic taste and cools the cheese.
Drain well.
5. Break Into Curds
Use clean hands or a spoon to gently break the cheese into small cottage cheese curds.
6. Season
Mix in:
Salt
Heavy cream (if using)
Taste and adjust the salt as needed.
7. Chill
Refrigerate for at least 1 hour before serving.
The flavor improves as it chills.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Mariposas Kitchen Tip ❤️
Why Save the Whey?
Whey is packed with flavor and can replace water or milk in many recipes.
Around here, it almost always becomes homemade bread.
Using whey gives bread a wonderful flavor and creates a soft, tender loaf that's perfect for sandwiches, dinner rolls, hamburger buns, or even pizza dough.
Every batch of cheese gives us another reason to bake.
It's one recipe leading to another.
Ways I Use Fresh Whey
Instead of throwing it away, try using whey in:
Homemade sandwich bread
Dinner rolls
Pizza dough
Cinnamon rolls
Pancakes
Biscuits
Homemade crackers
protein shakes
Soup broth
Rice instead of water
It's an easy way to stretch your ingredients and reduce waste.
Cooking From Scratch Is About More Than Saving Money
Making your own cottage cheese isn't just about the final bowl.
It's about learning new skills, understanding your ingredients, and seeing how one recipe can become several more.
Milk becomes cheese.
Whey becomes bread.
And before you know it, you've created an entire homemade meal from ingredients you already had.
Those little moments are what make cooking from scratch so rewarding.
A Little Reminder From My Kitchen ❤️
Before you pour anything down the sink...
Ask yourself:
"Can I use this for something else?"
Sometimes the "leftovers" become the best part of the next recipe.
That's exactly what happens with fresh whey.
